Relish This

What you do when you have a glut of tomotoes.
A spicy tomato chilli relish made by The Man, for his fellow man (and woman) who like it hot.

 

Made with fresh local ingredients and a whole lotta love. The kinda love that only man possess. Her Indoors knows of course that this last bit is complete rubbish yet has let The Man put it on his label as he really does think his output is something remarkable. To be fair it is worth remarking on: the CWA wouldn’t go anywhere near this stuff. If you’re a man, this one’s for you.

To make about five jars here’s what you need.

Tomatoes – 1.5kg (Preferably home grown. I didn’t bother to blanch or skin them but you can.)
Chillies — 3 (but add more if you really want to blow your mind)
Onions — 4 (quartered)
Malt Vinegar — 2 cups
Brown Sugar — 2 cups
Mustard Powder — 1 tblsp
Curry Powder — 1 tblsp
Salt — 2tbls
Plain Flour — 2 tblsp
Additional Malt Vinegar — 1/4 cup
Man Stuff* — to taste

*Man Stuff is the type of stuff that just men have. If you’re a man, you know what I mean. If you’re not a man you may want to get a man to make this for you. You know it’ll  taste better.

 

 

Method

Choppy chop your toms and onions, stick in a bowl add the salt cover and leave for 12 hours. I think I left my for about 2 days in the fridge. When you get round to it, drain off the liquid.

Stick the mixture in a big pan, add the sugar, first measure of vinegar (2 cups) and the chillies. Boil gently for 1.5 hours, stirring frequently whilst drinking a beverage of your choice.

Mix mustard, curry powder, flour and second measure of vinegar (1/4 cup) to a smooth paste and stir in to your relish.

Boil for 5 mins and then spoon into your sterilised jars – add your man stuff here…
